RECIPE: Slowcooker Chicken & Bell Pepper Stew
INGREDIENTS:
1 1/2 pounds of boneless skinless chicken breast
2 large green bell peppers
2-3 medium onions
1 1/2 cups of hot water
15 oz can of beans of your choice
14.5 oz can of diced tomatos
1 1/2 teaspoons of cummin
1 1/2 teaspoons of sugar
1 teaspoon of dried oregano, crumbled (optional..I did not use this)
1/2 teaspoons of salt
1/2 teaspoon cummin
DIRECTIONS:
Put chicken in crockpot and cook on low for 3-4 hours...it will NOT be done yet.
Then, in a large bowl chop up the green peppers and onions.
Add the water, beans, tomatos, 1 1/2 teaspoon of cummin and the sugar.
Stir it all together in the bowl.
Take a metal spatcula and kindof give your chicken a quick chop up in the crock pot to where it is all pretty much roughly chopped up.
Then pour the mixture from the bowl over the chicken and mix together well.
Cook on HIGH for 4 hours.
After the time is up, stir in 1/2 teaspoon of cummin and 1/2 teaspoon of salt...mix & serve!
NOTE: Be sure to adjust the recipe accordingly for the amount of people you will be feeding. This recipe probubly feeds about three people.
