SOUTHERN POTATO SALAD
4 cups cubed, cooked potatoes
2 hard boiled eggs, chopped
Salt and black pepper, to taste
1/3 cup chopped onion
1/4 cup sweet pickle relish
2 tablespoons diced pimiento
1 1/3 cups mayonnaise
In a large bowl, combine the cooked potatoes, eggs, salt, black pepper, onion, relish and pimiento. Mix well. Add the mayonnaise and stir until well mixed. Refrigerate.
